Ingredients

  • 2 large eggs
  • 100 g (3.5 oz) red ant eggs (sold frozen or canned at Thai grocery stores)
  • 4 small shallots or scallions, thinly sliced
  • A splash of fish sauce
  • Vegetable oil, for frying

Instructions

  1. Heat a wok or skillet and add enough oil to shallow-fry. Beat the eggs, add the ant eggs, shallots, and fish sauce, and stir gently to combine.
  2. Pour the mixture into the hot oil and fry until golden on both sides. Slide onto a plate and serve with hot rice.
