These lime and mint chicken wraps pair tender, golden chicken with the bright zip of fresh lime and cool mint for a wrap that tastes like spring. They are quick to put together and make a perfect light lunch or easy dinner.

Ingredients

  • 500 g (1.1 lb) boneless, skinless chicken breast
  • 2 limes
  • 1/2 cup fresh mint leaves
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 whole wheat tortillas
  • 1 cucumber, cut into thin strips
  • 1 carrot, cut into thin strips

Instructions

  1. Slice the chicken breast thinly. Toss with the salt, pepper, 1 tablespoon of the olive oil, and the juice of half a lime, and marinate for 15 minutes.
