  • 150 g (3/4 cup) quinoa
  • 300 ml (1 1/4 cups) water
  • 200 g (7 oz) fresh strawberries, sliced
  • 10 g (about 1/3 cup) fresh mint leaves, chopped

  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • Salt and black pepper, to taste

Instructions

  1. Combine the quinoa and water in a saucepan, bring to a boil over medium heat, then reduce to low and simmer for 15 minutes, until the water is fully absorbed. Let cool.

  3. In a small bowl, whisk the olive oil, lemon juice, honey, salt, and pepper into a dressing.
  4. Add the cooled quinoa to the strawberry mixture, pour over the dressing, and toss gently. Adjust the salt and pepper to taste.
  5. Plate and serve right away for the best flavor.

Tips

  • Use more or less honey depending on how sweet you like it.
  • A crumble of feta cheese adds a lovely salty contrast.
