A plain shrimp omelet is easy to forget. This one is not: shrimp, onion, and tomato wrapped in soft egg with a generous layer of melted cheese, plus fresh chili for anyone who likes heat. The recipe comes from a home cook on the Thai community site Pantip.

- 2 eggs
- Butter, for frying
- 1 small onion, thinly sliced or diced
- A pinch of salt
- Chopped shrimp, as much as you like
- 1 tomato, diced small
- Shredded cheese
- Fresh chili, to taste
- Parsley or cilantro leaves, for garnish
- Black pepper

- Crack the eggs into a bowl and set aside.
- Heat a skillet over medium-low heat (too hot and the butter will burn and darken). Add the butter, then the onion and a pinch of salt, and cook until the onion turns soft and translucent.
- Beat the shrimp into the eggs and pour into the pan over low heat. (Alternatively, sauté the shrimp with the onion first.) When the egg is nearly set, scatter over the tomato, cheese, and chili, then fold the omelet over the filling and cook until the cheese melts.
- Sprinkle with parsley or cilantro and a little black pepper. Serve with Maggi seasoning sauce and ketchup.
