- 800 g (1¾ lb) lamb chops
- 1 bunch fresh rosemary
- 1 bunch fresh thyme
- 1 bunch fresh mint leaves
- 3 cloves garlic
- 3 tablespoons olive oil
- Salt, to taste
- Freshly ground black pepper, to taste
- 1 lemon

Instructions
- Rinse the lamb chops under cold water and pat them completely dry with paper towels.
- Finely chop the rosemary, thyme and mint, and mince the garlic.
- In a bowl, combine the chopped herbs, garlic, olive oil, salt and pepper to make a herb marinade.
- Rub the marinade evenly over the lamb chops and let them marinate for 15 minutes.
- Preheat the oven to 200°C (400°F).
- Arrange the chops on a baking sheet and roast for 20–25 minutes, until the surface is lightly browned and crisp at the edges.
- Let the lamb rest for 5 minutes, slice, squeeze fresh lemon juice over the top and serve.
Tips
- Cover the marinating lamb with plastic wrap so the herbs and garlic soak in more deeply.
- Adjust the roasting time to reach your preferred doneness; a meat thermometer reading 60°C (140°F) gives medium.
