This spring fried rice makes the most of sweet green peas and meaty shiitake mushrooms, finished with scallions and a splash of soy sauce. It is simple, satisfying, and comes together fast, which makes it a great weeknight family meal.

Ingredients

  • 3 cups cooked rice (preferably chilled overnight)
  • 1 cup green peas, fresh or frozen
  • 200 g (7 oz) shiitake mushrooms, sliced
  • 2 eggs, beaten
  • 2 scallions, chopped
  • 2 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • Salt and white pepper, to taste

Instructions

  1. Heat the oil in a wok over high heat. Pour in the beaten eggs and stir-fry quickly until just set, then remove and set aside.
  2. In the same wok, stir-fry the mushrooms for about 3 minutes, until softened.
  3. Add the peas and cook for 2 minutes, then add the cold rice and toss until everything is well mixed and the rice is heated through.
  4. Pour in the soy sauce, return the eggs to the wok, and keep tossing until everything is evenly combined.
  5. Stir in the scallions, season with salt and pepper, and serve hot.

Tips

  • Day-old cold rice gives the best texture; freshly cooked rice tends to turn mushy.
  • Feel free to add other vegetables such as diced carrot or green bell pepper.
