- 3 cups cooked rice (preferably chilled overnight)
- 1 cup green peas, fresh or frozen
- 200 g (7 oz) shiitake mushrooms, sliced
- 2 eggs, beaten
- 2 scallions, chopped
- 2 tablespoons soy sauce
- 2 tablespoons vegetable oil
- Salt and white pepper, to taste

- Heat the oil in a wok over high heat. Pour in the beaten eggs and stir-fry quickly until just set, then remove and set aside.
- In the same wok, stir-fry the mushrooms for about 3 minutes, until softened.
- Add the peas and cook for 2 minutes, then add the cold rice and toss until everything is well mixed and the rice is heated through.
- Pour in the soy sauce, return the eggs to the wok, and keep tossing until everything is evenly combined.
- Stir in the scallions, season with salt and pepper, and serve hot.

- Day-old cold rice gives the best texture; freshly cooked rice tends to turn mushy.
